Blondie Bars with Chickpea Base

Why use flour, try using chickpeas as a great low cal, high fiber alternative for this tasty treat.

Ingredients:
1 16oz can chickpeas (garbonzo beans) drained & rinsed
4 eggs
3/4 c packed light brown sugar
1 1/2 c white chocolate chips
1 tsp vanilla extract
1/2 tsp baking powder
8 oz frozen raspberries
granola for topping

Heat the berries and a sprinkle of the brown sugar in a sauce pan over low heat.
Crush the berries with a spoon and set pan aside
Melt the chocolate in a double-boiler (or in the microwave).
Once melted, remove pan from the heat and set aside.
Add chickpeas, eggs, vanilla to the food processor and blend.
Add in the remaining brown sugar, baking soda, and melted chocolate. Blend.
Pour ino an 9″x9″ pan sprayed with non-stick cooking spray.
Use a butter knife to swirl in the raspberries.
Top with granola
Bake at 350 degrees for 45-50 minutes
Allow to cool completely before cutting into bars and serving
