Chocolate Coconut Chia Seed Protein Bar

Chocolate Coconut Chia Seed Protein Bar

* 3/4 cup coconut oil
* 2-4 tablespoons xylitol
* 4 eggs
* 4 tablespoons cocoa powder
* 1/2 teaspoon vanilla, optional
* 1/8 teaspoon salt
* 1 cup grated or flaked dried coconut, unsweetened
* 1/2 cup chia seeds
* 1/2 cup whey protein
* 1/2 cup coconut flour
* 1/2 cup almond flour
* 1 tsp almond flavoring

Preheat oven to 375. Grease square 9X9 glass pan with extra coconut oil. You could use a larger pan, but they would be thinner.

Melt oil if needed and in a large bowl stir in remaining ingredients with the oil until well blended. Put the batter in the pan and make sure it is spread evenly.

Bake in preheated oven for 14-15 minutes. Don’t overcook. I cut them
and put them on a wire rack to cool.
